# How do I upsell as a server without being pushy, and does it raise my tips?

**Short answer:** Suggest one specific thing you’d actually order, at the moment it fits: a starter when they sit down, a glass that goes with their dish, dessert when plates clear. Does it raise tips? The evidence is thin: one 1970s study of one waitress found her average tab rose 25 percent. The researcher who reported it also warns that on a busy shift, add-ons can slow your tables down and cost you.

## What the study found

The one study, laid out. Suellen Butler and William Snizek had one waitress at an upscale restaurant in the northeastern US use suggestive selling on alternate weeks over six weeks. Cornell’s Michael Lynn reported the results in 2011:

| Measure | Weeks without | Weeks with suggestive selling | Change |
| --- | --- | --- | --- |
| Average tab | (not given in Lynn’s summary) | (not given in Lynn’s summary) | Up 25% |
| Tip per person, estimated as 15% of the bill | $1.25 | $1.53 | Up 23% |

That’s one server, one restaurant, 1970s prices, and a tip figure estimated from the bill rather than counted. It doesn’t prove upselling will raise your tips by any amount. Not tax or legal advice.

## Plain English

### Lines that don’t sound like a script

- **Starters:** “If you’re hungry, the [appetizer] comes out fast and it’s great to share.”
- **Drinks:** “With the [dish], the [wine] by the glass goes really well.”
- **Upgrades:** “You can add [add-on] to that. It’s what I’d do.”
- **Dessert:** “Save room? The [dessert] is my favorite thing here.”

Only say it if it’s true. A real recommendation is easier to say and easier to believe, and you have to know the menu to make one. That’s why learning the menu well is the first upselling skill: [how to memorize a menu fast](https://www.tipmaxapp.com/answers/how-to-memorize-a-menu-fast).

### Upselling vs suggestive selling

People use the words loosely. Here, upselling means suggesting a pricier version of what the guest already wants (a bigger size, an add-on, a better pour). Suggestive selling means suggesting something they hadn’t thought of (a starter, a drink, dessert). Both come down to one specific, honest suggestion.

### Does it actually raise tips?

The logic: many guests tip a percentage of the bill, so a bigger bill can mean a bigger tip. Lynn makes that argument. The direct evidence is the one study above: one waitress, one upscale restaurant, 1970s. Treat it as a reason to try, not a promise.

### When not to upsell

- **When you’re slammed.** Lynn warns that on a busy shift, suggestive selling may backfire: add-ons make meals longer and slow table turnover. On a slow night, it’s worth trying.
- **When a guest has already said no.** Once is a suggestion. Twice is pushy.
- **When a guest has a food allergy.** Don’t push add-ons you haven’t checked. Every item goes through the allergen chart and the manager.
- **When a guest is visibly intoxicated or underage.** Don’t serve or suggest alcohol at all.

> **Alcohol: follow the law and your training**
>
> Never serve or upsell alcohol to anyone who is visibly intoxicated or underage. Follow your alcohol-service certification training and local law.
>
> Certification rules differ by place. For example, **California** requires on-premises alcohol servers to be certified through the state ABC’s Responsible Beverage Service program within 60 days of their first date of employment, and **Ontario** requires anyone involved in the sale or service of liquor, or taking orders for it, to hold certification from an AGCO-approved course.

> **Allergens: check, don’t guess**
>
> Your restaurant’s allergen chart and your manager or kitchen are the source of truth. Never answer an allergy question from memory. If you’re not sure, say you’ll check, and tell the manager about every allergy.

### See if it works for you

Track your shifts for a few weeks, noting the nights you pushed starters and dessert and the nights you didn’t. Compare your tips per hour, not just the total, since slow and busy nights differ. Your own numbers beat a 1970s study.

## Common mistakes

- Upselling on a slammed night and slowing every table down.
- Reciting a script instead of recommending something you like.
- Asking again after a guest already said no.
- Suggesting another drink to a guest who seems intoxicated.
- Believing claims that upselling raises tips by a set percentage. The evidence doesn’t support one.
